Serves 6

INGREDIENTS: 

1 kg mixed heritage tomatoes, sliced

2 tbsp extra-virgin olive oil

Juice and zest of 1 lemon 

2 tbsp fresh oregano leaves 

2 tsp sea salt

1 tsp freshly ground black pepper

METHOD: 

Arrange the sliced tomatoes on a serving platter. 

Place the olive oil, lemon juice and zest, fresh oregano, sea salt, and black pepper in a small bowl, whisk together and pour over the tomatoes. 

Leave to marinate for 10 minutes before serving.
